elderflower champagne

stuff

  • 6 large elderflower (Sambucus nigra) heads
  • 1 gallon cold water
  • 2 large lemons juice
  • 2 lbs sugar
  • 2 tablespoons white wine vinegar

how to

  • put it all in a tub and stir it about a bit
  • leave for 48 hours
  • strain
  • bottle it in PLASTIC bottles
  • keep letting the gas off (the stuff in the bottles) periodically
  • about six weeks should do but it is drinkable before that. the longer you keep it the stronger it gets!!!!!!
